Ingredients:
β1 cup Basmati Rice / Brown Rice
β 1 cup Moong dal
β 1/2 cup Chana dal
β 1 tsp Jeera (cumin seeds)
β 1 inch Ginger
β5 – 6 curry leaves
β 5 cups of water or more if required
β1 tbsp Ghee
β2 medium sized Onion (chopped)
β2 tbsp crushed Garlic
β 3 chopped Green chillies
β 2 medium sized Tomatoes (chopped)
β Salt to taste
β 1 tsp Turmeric powder
β 1 tsp Red chilli powder
β1 tsp Jeera powder
β Juice of 1 whole lemon
β 1 – 2 tsp Kasuri methi
β Live charcoal /Burnt coconut shell + Ghee
βHandful of fresh coriander leaves (chopped)
β‘οΈ For Tadka :
β1 tbsp Ghee
β1 tsp Jeera
β 1 tsp Red chilli powder
β 1/2 tsp Asafoetida (hing)
β 2 – 3 Whole red chilli
β 3 tbsp Fried onions (optional)
Directions:
β Rinse the basmati rice / brown rice with water thoroughly. Soak the rice for 30 minutes.
β In a boiling water add the washed and soaked rice, salt to taste and cook for 15 – 20 minutes. Strain the cooked rice and place them aside.
βWash all the dals thoroughly. Soak them for 15 mins.
β In a pressure cooker add the soaked and drained dal , 5 cups of water, and salt to taste.
β Stir and pressure cook on medium flame for 4 – 5 whistles. Switch off the flame and let the cooker depressurize naturally to open the lid. Give it a nice stir.
βIn a wok heat ghee, add jeera and let it splutter.
βNow, add crushed garlic , ginger green chillies, ginger , curry leaves and sautΓ© for a minute.
βLater, add onions and cook until they turn tanslucent.
β Add tomatoes, salt, and all the powdered spices. Cook until tomatoes are mushy.
βAdd the cooked dal & mix well
βAdd the cooked rice, mix well and cook for 3-4 minutes.
β Add water to adjust the consistency and further cook for 4-5 minutes.
βPlace a live charcoal or burnt coconut shell and pour few drops of ghee, cover and smoke for 3-4 minutes.
β Add kasuri methi and lemon juice, give it a nice stir. Lastly, garnish with some fresh coriander and serve hot with the final tadka.
β‘οΈ For Tadka :
β Heat ghee in a pan, add jeera, red chilli powder, asafoetida, whole red chilli and fried onions, stir for few mins and pour it over hot dal khichdi before serving.
