Serves: 250 ml
Ingredients:
●22 dried red chilies ,soaked in warm water for 30 minutes
●6 tbsp oil
●10 large garlic cloves, finely chopped
●1.5 inch ginger , finely chopped
●1 small white onion / shallots,finely chopped
●1/2 cup water + 2 tablespoons to grind the soaked red chilies
●1 tablespoon tomato paste
●1 tablespoon white vinegar
●1 teaspoon soy sauce
●1/4 teaspoon black pepper
●Salt to taste
●1 tablespoon sugar
●4 tbsp coriander roots / stems , finely chopped
Method:
◆De-seed the chillies and soak the dried red chilies in warm water for 30 minutes. Then drain the water and grind the chilies to a smooth paste using 2 to 3 tablespoons water in a blender.
◆Heat oil in a skillet on medium heat. Once the oil is hot, add the chopped garlic and ginger and saute until the raw smell goes away. You don’t want to brown them, so keep that in mind.
◆Then add the chopped onion and coriander roots . Cook it until it’s fragrant and starts smelling cooked.
◆Stir in the prepared red chili paste and cook for 1 to 2 minutes. Now add 1/2 cup water and tomato paste. Stir and cook for another minute or so.
◆Add the vinegar, soy sauce, salt , sugar and mix to combine. Cook the sauce until the oil starts separating out . This will take around 5 to 6 mins. Keep cooking until the sauce gets thick enough.
◆Season it with black pepper and cook for about a minute. Let the sauce cool completely and then store in a jar and refrigerate it. Schezwhan Sauce stays fresh for about a month in the refrigerator.
